I have been made several variations of this recipe, but this one is my favourite!
Frozen Strawberry Pops Recipe
- ½ tub (4oz) strawberry-flavor cream cheese (I use ⅓ less fat version)
- 2 tbs milk (I use 2% (semi-skimmed))
- 6 ripe strawberries, hulled and halved
- Sugar, to taste (optional)
- Add the cream cheese and milk to a food processor, and whizz it until smooth.
- Add the strawberries and pulse the mixture once or twice until they are roughly chopped.
- Taste and stir in sugar if necessary – this depends on the sweetness of your strawberries but usually I find I don’t need to add any.
- Spoon the mixture into pop molds.
- Freeze until set – usually about two hours.

My son hadn’t previously been convinced by the whole food-on-a-stick concept, so I was really pleased that he liked them – they definitely made it onto his “approved food” list. And he was delighted to find some little pieces of strawberry in his ice cream. Win-win!
